Assassin's Creed games are more similar to Halo Combat Evolved in that they have cutscenes play out in the scene, but using animations, camera angles, positioning, etc. that's been pre-ordained and set by data. Using data and tools to create cutscenes is not an issue. Now the Animations set by the AI are not made on the fly either.

Assassins Creed 2 had some great moments, and I never felt the need to skip anything. I'm not even sure they prevented you from skipping cutscenes. I just posted this in another thread, and I think it's relevant here, but making a cutscene so good people feel the need to watch it later on youtube is quite the acomplishment

AC:Brotherhood and Revelations allow you to skip cutscenes. You do it in the pause menu. In AC1 you can skip some dialogue by jumping at the person just before you activate them, causing them to stumble and cut the dialogue short. In AC2 I don't think you have any options.
